If you're deciding to start the new year off on a lighter note I have an excellent fish dish that's filling as well as delicious. I like to serve it with some egg noodles, but you could use rice or any other side you like.
Mahi Mahi with Macadamia Nut Crust
1 mahi mahi fillet
Remove mahi mahi from lime juice and place in a baking dish. Cover with butter and sprinkle desired herbs and seasonings.
Spoon panko mixture atop mahi mahi, pressing lightly to adhere.
Bake until fish is cooked through, about 20 minutes.

1/3 cup panko
1/4 cup chopped macadamia nuts
1/8 teaspoon salt
4 tablespoons butter melted, or squeeze butter
