Roasted Garlic Asparagus with Feta

IMG_3358 (800x600)

I messed up my recipe a little bit. I didn’t add the feta before it went in the oven and I think it would have made the dish way better. Call it distractions in life whatever, it was still good and I’ll make it again soon the right way!

4-6 Cloves Garlic, Minced
1 Teaspoon Fresh Lemon Zest
1 Teaspoon Dried Oregano
1/4 Teaspoon Red Pepper Flakes
Salt - To Taste
Black Pepper - To Taste
1/2 Cup Feta Cheese, Crumbled

In a small sauce pan heat the olive oil, garlic, lemon zest, oregano, and red pepper flake over low heat just until the garlic starts to become golden.  Remove pan from heat and cool about 10 minutes. (Garlic will continue to brown a bit more)
