Fish Tacos


Summer time is all about fun in the sun and vacation which is what inspired me for this dish. My parents and brother just got back from Mexico and were kind enough to bring us back some fresh Dorado also known as Mahi Mahi and Dolphin they caught while they were there. I let my memories come into play for this inspiration by thinking back to my past trips to Mexico. Fresh Seviche and the stands where they sold fish tacos so it hit me why not fish tacos for dinner they're quick and tasty. These tacos have the freshness, heat and color all rolled into one.


Sour Cream Spread

1/4 cup sour cream
1/4 to 1/2 teaspoon chipotle powder

Mix together and refrigerate until needed.

Fried Corn

1 can kernel corn, liquid drained
2 tablespoons butter
1 teaspoon Tony Chacheres
1 teaspoon Mrs. Dash
1 teaspoon Buddy's Blends

Combine all ingredients in a pan over medium high heat. Once butter is evaporated and corn is a light caramelized brown color it's ready.


Grilled Fish

3 to 4 fish fillets depending on the size
1 tablespoon olive oil
Seasonings to taste (we used Mrs. Dash, Buddy's Blends, lemon pepper, garlic salt, cayenne, red pepper flakes

While your fish is finishing on the grill you can start to grill your tortillas. You want to make sure you don't walk away from these because the take very little time and depending on how hot your coals are they can burn quickly.

Tortillas flipped and finishing on the other side. They will puff up but don't worry they will deflate once they're off the heat. Make sure you don't cook them too long because you'll have chips instead of flexible tortillas. They just need a little color on them which gives the taco an extra grilled flavored tieing your dish together.

Once your everything is taken off the grill you can assemble. I took my tortilla and spread some of the sour cream mixture. I then laid down some lettuce topped it with my fish and sprinkled some corn on top. If you want you can also flake your fish instead of putting a whole fillet on your taco.

Heating up the coals took 30 minutes, but once it's ready this meal takes less then 20 minutes to cook and assemble. Hope you enjoy it!
