Designed for One by Nancy Hughes Review and Giveaway

We all know someone with Diabetes. It’s scary to think about, but we can have a better handle on it if we do things in moderation. A close friend of mine’s daughter is 4 years old and good friends with my son, she was just diagnosed. Families can easily get overwhelmed with all the information and research. It’s a huge lifestyle change, but it can be done. Even though our household isn’t diabetic, we have several family members who are. This cookbook was great when it came to what to make for times they visit. It’s not a drastic “OMG we had to change EVERYTHING for you” meals either. All of the recipes are still flavorful without being complicated.

One of my favorite points of this book where at the bottom of each page there was a breakdown. So if you have to track carbs or sugars or whatever, there was an easy breakdown to help you calculate your daily intake.

There’s no long stores about the recipe, it’s very to the point. I wish that there where a few more pictures, but the ones in the book look amazing. Here’s just a few of the pictures that are in the book -

I can’t wait to incorporate more of these recipes into our weekly rotation in hopes to stay on that path of a healthy lifestyle!

B-O-R-I-N-G …but if a person has diabetes, it’s very, very important to eat healthy meals. That’s when I took a new approach in the kitchen and made it easy…for everyone. My editor loved the idea…wound me up and I hit the kitchen with tons of ideas to test out!

  • They’ll learn how to shop and store foods properly and easily.

  • The recipes are easy so they’ll make them again and again

- Packages of meat and poultry are sold in larger amounts than needed. What can a single person do? Often your butcher can cut a pork tenderloin or beef chuck to the weight needed. If not, when you get home, cut it and wrap tightly in plastic wrap and freeze the unused portion for a later use.

Chicken breasts can sometimes be twice as big as needed. Simply cut them in half lengthwise (so it looks like 2 thinner chicken breasts) wrap and freeze separately. Or you may cut the breast in half crosswise, flatten to 1/2-inch thickness between 2 sheets of plastic wrap, then wrap and freeze individually.

  • Are these dinners only for people with diabetes or are they for everyone?

Absolutely everyone! No “special” ingredients, no extra shopping...a basic grocery store is all you need! Whether you’re a novice in the kitchen getting settled in your first apartment or a single seasoned cook used to cooking for a large family...this is your “go-to” book that should be left out on the kitchen counter at all times!

I love Thanksgiving and having the opportunity to work with Butterball again this year! Butterball conducted its first-ever consumer survey this year for a pulse on Thanksgiving preppers’ expectations and realities when it comes to one of the most important meals of the year. I wanted to share some interesting findings the survey found:
·         Two-thirds of Americans rank Thanksgiving as one of their favorite holidays.
·         Two-thirds of Americans like to incorporate new traditions into their celebrations…many of which include cooking up new and different recipes for loved ones to enjoy.
·         Out of all things Thanksgiving preparers cook up, they’re most proud of the turkey. And 88 percent prep it the old-school way: in an oven.
·         84 percent feel excited about preparing the meal, and 74 percent of Americans don’t expect Thanksgiving to be perfect.
·         It’s the turkey!  Despite the overall positivity around the holiday, first-time millennial preparers are still feeling the pressure. Eight in 10 first-time cooks worry about cooking the turkey correctly.  This number drops among experienced preparers, but still 43% worry about getting it right.
In other exciting news, Butterball launched a campaign this morning to make a Thanksgiving Turkey emoji a reality! Did you know that every other major holiday has an emoji except for Thanksgiving? This is intended to spur excitement for the holiday season among media and consumers by encouraging them to sign the petition on Change.org. I would love if you could join the fun and sign the petition!

Today’s recipe comes from my good friend Rachael who was kind enough to share a recipe that’s been in her family learned from a guy met at the hunting camp. Stay with me it’s not your traditional flavors….but wow is it good when it’s done! Don’t taste the marinade….it’s a little yucky, but once it cooks down it’s sooooo good!! I used 2 turkey breast roast which I love for ease of prep and if you don’t need a ton of leftovers this will do the job.

Backwoods Turkey
(Adapted from Rachael)


1 pound brown sugar
Jar of grape jelly
1 bottle of soy sauce
4 cans of beer (we all use Budweiser or light)

Combine brown sugar and jelly. Stir in soy sauce and beer. (I combined the day before and let it sit in the fridge overnight so the foam settled.)

Put about half of it in with the turkey and then reserve the other half to baste the turkey while cooking.

Thicken with cornstarch and milk to make gravy when turkey is done.

1 whole organic turkey (about 12 pounds) 1-2 apples (quartered)
1 head garlic (halved widthwise)
1 small bundle thyme
1 cup butter
1/4 cup bourbon
1/4 cup hard cider
5 sprigs sage
8 onions (quartered)
Salt and Freshly ground black pepper (to taste)
 
The Day Before: Pat the turkey dry. Put turkey on a clean, large cloth and rub both the inside and outside generously with salt. Put the turkey in a container that fits comfortably, cover with plastic wrap and put in the fridge.

The next day, rinse the turkey and pat dry. Remove turkey 1 to 2 hours prior to roasting, so it can come to room temperature.
 
Preheat the oven to 425 degrees F, with the oven rack set on the lowest rung. Stuff the cavity of the turkey with the quartered apples, head of garlic and bundle of thyme.

In a small pot, bring the butter, bourbon, hard cider and sage to a simmer. Simmer and reduce for about 10 minutes. Remove from the heat and allow to cool slightly. I forgot to add the sage in until the end. oopps

Place the quartered onions in the bottom of the roasting pan, acting as a rack. Drizzle the onions with olive oil and season them with salt and pepper. Add the neck and gizzards as well.

Set the turkey on top of the onions.

Once cool enough to handle, soak a double layer of cheese cloth big enough to cover the bird in the butter mixture and drape over the breast and legs of the turkey. Pour the remaining contents of the pan over the bird, pushing the pieces of herbs into the bottom of the roasting pan.

Place the turkey in the oven and roast for 45 minutes. turn the temperature down to 375 degrees F and continue roasting for another 10-15 minutes per pound. Remove the cheesecloth in the final 10 minutes if you would like more browning.

Cook until an instant read thermometer reads 160 degrees F (inserted at the thickest part of the thigh).
 
Allow turkey to rest for a minimum of 20-30 minutes.

Tips: If you don't have a cheesecloth, baste with the pan juices every 30 minutes.
