If you're looking for a super easy meal to make that takes 15 minutes then this is the meal for you. I'm stocking up on some tortellini for nights just like the one we had where we took the dog out to play and next thing you know it's 7:30pm and we haven't had dinner so I needed something easy and not super heavy. I originally wanted to use the tortellini with an herbed sauce recipe I've been wanting to try, but opted for the back of the box recipe and I'm glad we did try it. I didn't have any bacon defrosted so I substituted bacon bits. It wasn't super noticeable, but I tossed in a few too many so it was a little salty, otherwise it worked fine.
Tortellini Carbonara (Adapted from DaVinci Tortellini box)
1 (7 ounce) box DaVinci Tortellini, uncooked
1 small clove garlic, minced
1 1/2 teaspoon DaVinci Olive Oil
1/2 teaspoon white vinegar
3 slices bacon, cooked, crumbled
1/3 cup Parmesan cheese
1/4 cup whipping cream
1 tablespoon fresh parsley, minced
1/4 teaspoon pepper
Cook tortellini according to directions; drain. In small saucepan, cook garlic in hot oil, over medium high heat. Stir in vinegar.

Add garlic mixture, and remaining ingredients to tortellini.
Toss gently to combine. Serve immediately. Makes 3 to 4 servings.
We love carbonara. We love tortellini. I never thought to combine them. This sounds like a home run.

You should find ways to cut some of the calories, like give substitutions for some of the items that are high calories.
ReplyDeleteA friend made this for me first and it was really great so I had to cook it myself. It was a giant hit. I'll be cooking this again!
ReplyDeleteIf there is no bacon this is not bacon or some type of salted pork and egg then this is not Carbonara. Call it for what it is, a cream sauce. Also go with white wine instead of the vinegar it will add more flavor on top of he acid notes
