Peach Butter

I love having fresh fruit around the house. My in-laws brought us some peaches from Fredricksburg last week and they are so sweet and juicy it's unbelievable. I've been holding on to this recipe for a while now so I decided on giving it a try before they started to get really bruised up. It worked out perfectly to make a jar for us and a jar for them as a thank you gift.


Peach Butter

3 cups sliced fresh peaches (about 4 cups)
1/4 cup orange juice
3/4 cup sugar
2 tablespoons honey
1/2 teaspoon grated orange rind
1/8 teaspoon ground allspice

Combine peaches and orange juice in a saucepan; bring to a boil. Cover, reduce heat, and simmer 8 minutes or until tender, stirring occasionally. Cool slightly.

Transfer mixture to a blender or food processor; process until smooth, stopping to scrape down sides.

Return peach mixture to saucepan; add sugar and remaining ingredients.

I didn't have a fresh orange so I used a little of the dried orange peel instead.

Bring to a boil; reduce heat, and simmer, uncovered , 25 minutes or until thickened, stirring occasionally.

Cool completely. Cover and store in refrigerator up to 2 weeks.
