I can't tell you how excited about today I am! Last Thursday I won Carrie Underwood tickets, a case of vitamin water and was entered in a drawing to win meet and greet passes. Well I got a call saying my name was drawn so now I get to meet her! I got pretty close to her when I won the trip to Disney World back in February of 2009 for the opening of American Idols new attraction. For details click HERE. She sang a song with David Cook and it was awesome so I can't wait to see here live again. If you follow me on Twitter I'll have some pics of her up close and personal.So for a hardy breakfast I made some banana french toast using up some over ripe bananas I had. It came out pretty good and I will be making them again for sure.
Banana French Toast

1 banana
1/4 cup milk
1 egg
1/2 teaspoon cinnamon sugar
1/4 teaspoon vanilla
4 slices of bread
Blend all ingredients together and cook as you normally would cook french toast.
