I’m behind on posting I’m sorry, I was out of town and had a lot of stuff to do yesterday so I’m a day late. My husband and I went on our first jugging night fishing trip. My brother has done this before. He uses old bottles then attaches a line with several hooks that you attach bait to and a weight at the end of the line. You drop it in the water in different areas and go back to check them with hope there’s fish on the line. Here’s a couple of the pictures of the fish we caught on our trip from 7pm-3am.

It seems to be that I’m on a strawberry kick lately. It’s not my fault they’re on sale and I love to have some fresh fruit so you’ll have to bare with me. I love simple quick desserts and this one falls in that category. I originally made this for our anniversary at the end of June telling my hubby it’s a berry-chocolate fool for 2 fools in love. He got a kick out it and I crossed my fingers he would like it. He did and he’s asked me to make it again since then so I think it’s a keeper. If you’re in a super hurry you can use the tub of whipped topping instead of making your own, but I preferred making it from scratch.

Berry-Chocolate Fools
(Adapted from Food Network Magazine)
1 quart quartered strawberries
2 tablespoons granulated sugar
1 cup heavy cream
2 tablespoons confectioners' sugar
2 ounces finely chopped semisweet chocolate (I just used chocolate syrup)
Toss strawberries with sugar in a bowl.
Beat heavy cream with confectioners' sugar until soft peaks form.
Melt semisweet chocolate in the microwave and cool slightly; fold into the whipped cream.
Layer the cream and berries in glasses.
