Mint Chocolate Baileys Chippers

If you have any Bailey’s left over from St. Patrick’s day then you’ll want to try these cookies. They are super easy and quick to make. You can taste the Bailey’s in them so make sure you don’t make them too big!

Mint Chocolate Baileys Chippers
(Adapted from (Never Home) Maker)

1/4 cup plus 2 tablespoons vegetable oil
1 cup brown sugar
1 large egg
1/4 cup mint chocolate Baileys
1 tsp vanilla extract
1-1/2 cups whole wheat flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon salt
1 cup chocolate chips

Preheat your oven to 350 degrees F. Line a cookie sheet with parchment paper.

With your paddle attachment on high, mix together the brown sugar and oil until well incorporated.

Add egg, Baileys, and vanilla extract. Mix well.

In another bowl, sift together the flour, baking soda, baking powder, and salt.

Add to the wet ingredients and stir until everything is moistened.

Fold in the chocolate chips.

Scoop tablespoon-sized dollops onto your cookie sheet, spacing about 2 inches apart.

Bake for 10 to 12 minutes -- until golden. Repeat with the rest of the dough.
