Corn Salad


This is really easy to toss together for your next pot luck or side dish and can be made ahead of time. My mother in law made this for Christmas dinner and it was a big hit with my hubby. You can change up the corn and use whatever type you like.

Corn Salad
(Adapted from Juanita Herrington)

1 can (14 oz) white shoe peg corn, drained
½ cup chopped bell pepper
3 or 4 green onions, chopped fine
1 large tomato, chopped
salt and pepper to taste
2 to 3 tablespoons mayonnaise

Combine all ingredients and mix well.

Chill before serving.

  1. I love corn salad, don't make it because I'd have to eat all of it. But, I usually eat a ton of it when we eat somewhere that has it.
