Two Potato Bisque

I’m not 100% sure what I did wrong on this dish, but it totally doesn’t look like the original:

We thought it was ok, nothing that I really wanna remake anytime soon, especially since I don’t know what I did wrong. The only thing I can think of is maybe the recipe wasn’t clear on the leeks, I used 2 whole leeks and maybe it’s just 2 leaves of leeks. That would explain how green mine turned out.

Two Potato Bisque
(Adapted from Verses From My Kitchen)
Serves 4.

1 large sweet potato, peeled and cut into 1″ cubes
1 large potato, peeled and cut into 1″ cubes
2 leeks, cut in half and washed, thinly sliced
3 garlic cloves, minced
2 bay leaves
2 cups vegetable stock
1/4 grated nutmeg
2 tbsp. grated Parmesan cheese
1 cup heavy cream
1 cup milk
1 tsp. pepper, 1 tsp. kosher salt

In a large pot over medium heat combine both potatoes, leek, bay leaves, garlic, salt & pepper, nutmeg and stock.

Bring to a boil. Cover pot and bring to a simmer for 20 minutes.

Once the potatoes are tender, pour into a food processor and puree until smooth. Return to pot.

Keep heat at low and add cheese, heavy cream, milk and salt and pepper. Once heated through, serve.

Serve with a dollop of lime juice-infused sour cream.
