I don’t know what it is about the Texas heat, but I love some hot fried food from time to time. I’ve been trying to think of a new way to do jalapeno poppers, because they are so time consuming and my hand and eyes always burn from messing with the peppers. This shaves off so much time. Once I stuffed them all I put them on a cookie sheet and popped them in the freezer then I combined them all into zip lock bags so we could just fry a few as we want them.
Easy Jalapeno Poppers

1 package refrigerated square wonton wrappers
2 8-ounce package cream cheese, softened
4 ounce can diced jalapenos with juice (you can also use fresh)
1 cup shredded cheddar cheese
Vegetable oil for frying
In a bowl, combine cream cheese, jalapenos, and cheddar cheese.
Add 1 teaspoon of the filling to the center of each wonton.
Dip your fingers in a bowl of water and run your wet fingers around all edges of each wonton. Fold the wontons over the filling, pinching the edges to seal to make a triangle or rectangle and remove any air bubbles.
Fry wontons in batches in hot oil until browned and crispy.
Drain on paper towels and sprinkle with coarse salt. Serve warm.
Okay, need to make these. We love wonton....anything wonton.
