Instead of making a pie to satisfy my craving I found a quick cocktail to try. It did taste like a coconut pie, but I had to add little more rum because the Kahlua took over a little. Sometimes it needs a little tweak, but it’s good when you get it just right.
Coconut Pie Cocktail
(Adapted from A Year of Cocktails)
1 oz Malibu rum
1 oz Kahlua
2 oz milk
In a short cocktail glass, fill with ice and add all of the ingredients above. Stir it up really well so that the Kahlua mixes in with the other two ingredients.
