Jalapeno Popper Pigs In a Blanket

If you are looking for an appetizer to bring to a New Year’s Eve party, these little babies are super easy and you can prep them ahead of time and pop them in the oven when you are ready for some hot fresh ones. The pictures below show me using a whole triangle per cocktail sausage, but since I made these I’ve been cutting each triangle into 3 pieces (don’t forget that’ll add more cocktail sausages then listed below). It stretches the recipe further and they are more bite size.

3 ounces cream cheese, softened

1/4 cup fresh or canned jalapenos, diced

24 cocktail sausages

1 (8 ounce) package Pillsbury refrigerated crescent roll dough

 

Preheat oven to 375 degrees and spray a cooking sheet lightly with cooking spray.

 

In a food processor, blend the cream cheese and jalapenos until smooth. If you don't have a food processor just dice the jalapenos as fine as you can and blend.

Unroll the crescent rolls and cut each triangle into 3 small pieces. I found it easiest to split the triangle into two sections.


Slightly press the crescent roll with your hand to flatten and spread about 2 teaspoons of cream cheese mixture on the roll.

Add your cocktail sausage on top of the cream cheese and roll up.

Place on the cooking sheet and bake for 10-12 minutes or golden brown.
