Always on the hunt for good casserole dishes for hubby to take for lunches and this one he really enjoyed. The tortillas still get a little mushy even with using corn, which next time I may just set aside the tortillas and top the casserole with it rather than mixing them in. Hopefully that will make them crispy and give a better texture to the dish. The other option is maybe use some noodles in place of the tortillas. I would also maybe like to add a can of corn for some added color, texture and flavor.
Dude Ranch Chicken
(Adapted from Everyday Dutch Oven)
2 1/2 cups cubed cooked chicken I used 2 – 12oz packages grilled chicken, diced
2 cups shredded Cheddar cheese, divided
1 10 3/4 oz. can cream of mushroom soup
1 10 3/4 oz. can cream of celery soup
1 10 oz. can RoTel Diced Tomatoes and Green Chilies, undrained
1 4 OR 8 oz. can diced green chilies I used 1 10.3oz can of cream of jalapeno soup instead
3/4 cup sliced green onions
10 flour tortillas (8 inch), each cut into 6 triangular wedges I used corn they get less soggy
1 Tbsp sliced green onions for garnish
Lightly oil or spray dutch oven.
Combine chicken, 1 cup cheese, both soups, undrained tomatoes, green chilies and the 3/4 cup green onions in large bowl.
Mix tortilla wedges into chicken mixture.
Spoon mixture into prepared dutch oven.
Bake at 350 degrees for 30 minutes or until bubbling and hot.
Top with remaining 1 cup cheese, bake for 5 minutes or until cheese has melted.
Let sit for 10-15 minutes before serving.
Garnish with 1 Tbsp green onions.
Makes 6 servings.
