Pink Lemonade Pie

This is a special post to me that I’m dedicating to a dear friend in Dallas who’s recovering from breast cancer surgery. No one likes having to deal with a sickness and this girl is one tough cookie that is always upbeat and positive you would never know anything is wrong. In fact I had no idea she was dealing with anything until the day she had surgery. No one ever has the right thing to say or do, but what you can do is let them know you love them and support them in any situation just a simple “I’m thinking of you” is all you need. While I’m not there to hug her and cook for her and do anything she would need, I can spread the word about how serious breast cancer is and I can eat with her in spirit and show my support that she’s a brave girl who I admire!

I personally have had to deal with this subject after a lot of medication I was on and it annoys me that insurance won’t cover mammograms until I’m at the age of 35. What kind of early detection is waiting until a certain age?!?! Even if I have to pay out of pocket it’s something I’m still doing every year to be on the safe side.  Do your part and spread the word that early detection is the key to any issue and waiting will do you more harm then good. Usually the people who think they are healthy as a horse are usually the ones that could have caught something at an early stage if they just went in for checkups.

Pink Lemonade Pie

1 graham cracker crust

1 ~ 12 ounce can frozen pink lemonade {thawed}

***RECIPE update: Several readers have commented that the pie turned out "soupy" / "mushy" and would not set when chilled. I am suggesting that you only use 3/4 of the 12 ounce can of frozen pink lemonade concentrate. Maybe this will help the pie to set better when chilled."

1 large 16 ounce container Cool Whip

1 can sweetened condensed milk

PINK food coloring

sweetened flaked coconut {optional}


Combine the condensed milk and pink lemonade. Add in additional coloring if desired.

Plop in about 10 ounces of Cool~Whip.

DON'T ADD ALL THE COOL~WHIP.

Take a hand mixer and whip up the pink lemonade concoction.

If you need more PINK...just keep adding little drops until it's as PINK as you like.


Pour that luscious PINK mix into the baked graham cracker crust.

Place the pie in the fridge to set.


Toast the coconut on 375 degrees until slightly browned. Stir in food coloring and set aside.

When the pie is cool and set add a blob of Cool~Whip to the top.

Swirl it around.


Sprinkle on the pink coconut. Using a toothpick I drew out the ribbon design to have a guide to sprinkle on the coconut.

Serve it chilled.

THE BEST LICK ICE CREAM CONTEST


It's summer time and if you're in Texas that means it's HOT! My mom let me try out her ice cream maker since she's not using it and while I had it I thought I would come up with a new flavor ice cream. I figure why not I've never made ice cream before so how hard can it be? I had to learn about the ice and rock salt combo so that was a little tricky, but once I had that down I was cranking ice cream left and right. If I had more time I would have made another flavor I had in mind. Oh well there's plenty of contest so I'm sure there's bound to be another time to use it.

The contest I entered my "pink lemonade flavor" in was for The Best Lick Ice Cream Contest. There's already a couple of really great flavors entered so we'll see how it turns out.

Pink Lemonade Ice Cream
1 cup heavy cream
1 1/2 cups whole milk
1/2 cup sugar
1 tablespoon honey
1 tablespoon almond extract
1 can pink lemonade concentrate
pinch of salt
3 drops red food color, if desired for a darker pink look

Combine all ingredients and chill covered in fridge at least 20 minutes. Process in ice cream maker per manufacturer’s directions. The mixture will not be completely hard. To finish, put mixture into a lidded container and allow to harden in the freezer at least 1 hour before serving. Yields a little over 2 quarts.



So of course the only place for me to do my set up outside that was near a plug was right where the sun was! My poor ice maker was on overload that day.




The sticker on the box says this Dolly Madison Ice Cream Maker was inspected in June 1981. I'm one year older then this machine and it's good to see good quality machines that last so long.




The loud cranking of the ice cream maker freaked out the birds. The stuck to the top of the fence until I cut the machine off.

Overall I really liked how it turned out. A couple of people said it tasted like sorbet, but I liked it. It's tart like lemonade, yet finishes with a sweetness. My only problem was we ate it all up and didn't have any leftovers!

Pink Bikini

Hands down one of my favorite cocktails of the summer has to be the Pink Bikini! I made this sever times and still can’t get enough. Trust me you’ll love this one!!

1 (1.75-liter) bottle raspberry lemonade (we used Simply Lemonade)

1 3/4 cups coconut rum

1 cup amaretto liqueur

Combine raspberry lemonade, coconut rum, and amaretto liqueur in a large pitcher. Stir well, and serve over ice.

Pink Fizzy

I love girly drinks, but the hubby isn’t to hot on walking around with a pink drink unless it’s for breast cancer awareness so I had to make this when I had a girls night. We liked it overall, but made a few adjustments. It’s a little tart so you will need to add a little more ginger ale to each glass. We also added in some additional white wine and that tasted good too. Of course why wouldn’t adding more alcohol help? haha

1 (750ml) bottle of Sutter Home White Zinfandel

2 (12 oz.) cans of pink lemonade

2 (12 oz.) cans of lemon-lime soda


Combine all ingredients in a large punch bowl. Serve in stemless wine glasses with lemon & lime wheels as garnishes.

Princess Punch

I had high hopes for this drink recipe and thought the color looked fantastic for a summer punch, but alas I don’t know what the deal is. Another person commented on the recipe that hers came out the same way mine did so I didn’t feel so bad that I messed it up. The only think I can think of is maybe they used a sorbet instead of ice cream. It makes a ton so only make this if you are doing a large party. The good part is you can add some coconut rum or vodka to it and they both taste good.

1 (46 oz.) can pineapple juice
1 (6 oz.) can frozen pink lemonade
2 1/2 c. water
3 (28 oz.) bottles ginger ale
1 qt. strawberry ice cream

Mix all ingredients. Stir until frozen ingredients dissolve.

Raspberry Lemon Almond Tea

This is an easy recipe that can be adjust to fit whatever flavor combination comes to mind. My friend Laura gave me the original recipe which I used for a bridal shower and have been hooked ever since. The original recipe used regular plain instant tea (which keep in mind brown tea + lemonade equals a funky color). This version uses raspberry tea which gives it a really nice pink color. It's a unique combination that's refreshing and keeps your guest trying to figure out what you added to it. Try using different flavors of instant tea each time to change it up. Alcohol can also easily be added to the recipe as well or top off your glass with a shot of Sprite or 7UP for added fizz.
Raspberry Lemon Almond Tea

1 can frozen lemonade
3 tablespoons instant wild raspberry tea
1 tablespoon almond extract

Combine lemonade per direction on can. Stir in instant tea and almond extract, refrigerate. Best if made at least one day ahead of time. Garnish with lemon wedges frozen in ice cube.


Lemon Wedge Ice Cubes

Use ice cube trays and place one lemon wedge, or any slice of fruit, per ice square, fill with water and freeze.
