Herbed Olive Feta Melange

We really loved this recipe. The only problem is I did a lot of adjusting due to us not liking olives and I didn't have a flavored olive oil so I just added some chopped up roasted garlic instead, which in the end we didn't taste over the herbs.
Herbed Olive Feta Melange
(Adapted from Practical Gourmet Small Plates For Sharing)
Serves 6

1 pound fresh asparagus, trimmed of tough ends
1 tablespoon olive oil
sprinkle of salt
sprinkle of pepper
1/3 cup diced feta
1/3 cup large pitted green olives
1/3 cup large pitted kalamata olives
1 tablespoon fresh basil, chopped
1 tablespoon fresh oregano, chopped
1 teaspoon fresh rosemary, chopped
2 tablespoons roasted garlic olive oil

Toss asparagus in olive oil and sprinkle with salt and pepper.
Cook on a greased grill on medium for about 5 minutes, turning occasionally, until browned. Arrange on a serving patter.

Sprinkle with next 6 ingredients.
Drizzle with garlic olive oil.

  2. We love asparagus too. But, hubby is such a fuddy duddy and I don't think he would eat it. But, it sure looks good to me.
