Mushroom Omelets

Everyday I get up and make breakfast for my hubby before he goes to work. My friends think I’m crazy, but I actually enjoy it. I had some mushrooms to use up so I decided to make a mushroom omelet for breakfast.

Mushroom Omelet

1 teaspoon olive oil
½ cup fresh mushrooms, sliced
2 eggs, beaten
¼ teaspoon freshly ground black pepper
¼ teaspoon chives
3 tablespoons grated cheese

Heat oil in a small nonstick skillet on medium-high heat.

Add mushrooms; cook and stir for 2 minutes.

Add eggs, pepper and chives; cook 2 to 3 minutes or until eggs are almost set.

When egg mixture is set, but top is still slightly moist, top omelet wit small spoonfulls of cheese.

Slip spatula underneath omelet, tip skillet to loosen and gently fold omelet in half.Slide omelet onto serving plate.

    My hubby gets up so much earlier than I do, I'm not getting up in the wee hours to fix him breakfast.

    I really luv eggs and mushrooms together.
