Garlic Olive Oil Sauce with Lobster

Today’s post is a quick and easy dinner. I used home made pasta, but you could use store bought. The sauce comes together easily and doesn’t require a lot of ingredients. I added some fake lobster meat to make it a little more hardy, but you could use any protein you like or eat the pasta by itself.

Garlic and Olive Oil Sauce

½ cup extra-virgin olive oil
2 tablespoons finely minced garlic
1 pound pasta, cooked al dente
⅓ cup water reserved from cooking pasta
2 tablespoons finely minced fresh parsley
freshly ground black pepper, to taste
freshly grated Pecorino Ramano cheese for serving

I added in 2 (8 ounce) packages of lobster chunk meat and some seafood seasoning.

In a small saucepan heat the olive oil and garlic over medium heat.

Cook until the garlic becomes golden, stirring frequently so the garlic does not brown. Add in the lobster and additional seasoning if desired.

Remove from the heat and pour over the cooked, drained pasta.

Add the reserved water, parsley and black pepper. Toss to mix. Serve with grated Pecorino Ramano cheese.
