The Houston Livestock Show and Rodeo BBQ Cook-off kicks off this Thursday and then I’ll be a crazy lady until it’s all over in March. I’ll be sharing pictures again don’t worry. So in honor of BBQ Cook-off this week I’m sharing an easy crockpot version that was pretty good. Nothing beats the flavor you get from a BBQ pit, but when you can’t grill this is the next best thing. Loved eating it as a sandwich, stuffed baked potato and even in some breakfast tacos.
Slow Cooker BBQ Beef
(Adapted from Best Loved Slow Cooker Recipes)
3 pounds boneless chuck roast
1 ½ cups ketchup
¼ cup packed brown sugar
¼ cup red wine vinegar
2 tablespoons Dijon mustard
2 tablespoons Worcestershire sauce
1 teaspoon liquid smoke
½ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon garlic powder
Combine all ingredients in a slow cooker; cover and cook on low 8-10 hours or on high 4-5 hours. Shred meat with fork and serve.
