Hummus-Crusted Chicken

IMG_9595 (800x533)
I love doing some quick and easy dinners now that I have a baby and it’s even better when you get to use up leftovers from a party. I had some garlic roasted hummus leftover so I decided to use it as a crust on chicken. The recipe is written for chicken breast, but when I made it I used up some tenders I had in the freezer. We ended up adding some extra seasoning while we ate it, but either way it’s super quick for those busy nights.

4 boneless, skinless chicken breasts
1 cup hummus
1 lemon
1 tsp. smoked paprika

Preheat oven to 450 degrees.

Lay the four chicken breasts out evenly, then cover each chicken breast with the hummus so that the entire breast is covered.
