Spicy Grilled Watermelon and a Giveaway!

I know my family loves to visit me, but I think they mainly plan it around a meal time so I can whip up something extra special for them. Maybe not, but I know my cousins won’t pass up an awesome meal! I love doing something out of the ordinary and this watermelon is no exception. You can really grill anything, and it will blow your guest away to try something that’s different along with tasty they’ll wanna go home and try it themselves.

When it comes to the grill do you know which oil to use to prevent sticking? Did you know most grills are too hot for olive oil to handle? Corn oil has a high smoke point, meaning it’s ideal for your marinades and protein on the grates, and won’t burn or leave a bad taste. More importantly, it’s a better-for-you way to grill – a recent study found corn oil lowered LDL or “bad” cholesterol more than extra virgin olive oil.

Spicy Grilled Watermelon

1 package Chipotle Marinade Mix

1/4 cup Mazola Corn Oil

1 medium Watermelon, sliced in 2 inch slices and cut into triangles

 

Prepare chipotle marinade mix according to directions.

Coat all watermelon slices on each side with marinade; discard any remaining marinade.

Coat grill surface with corn oil. Preheat grill to its highest setting or to 500°F. Grill each side for about 5 minutes or until there is a nice slightly brown color with noticeable grill marks.
