Roasted Sweet Potato

I hope everyone had a wonderful Thanksgiving and enjoyed their time with their families and friends. There's so many things I'm thankful for this year and I can't wait to see what next year has to offer. My husband and I headed down to my parents for the holiday weekend in Corpus Christi and had a wonderful time seeing everyone. My dad sent home some sweet potatoes and so instead of the regular mashed or baked I thought I would roast them as I had seen them on Jersey Bites blog. These were huge so only 1 potato was needed to feed my husband and I.

Roasted Sweet Potatoes

1 large sweet potato
olive oil
steak seasoning

Peel and cube a sweet potato, then toss in olive oil and sprinkle on the steak seasoning.


Roast them in the oven for 35 minutes at 350 degrees F.

  1. Allie, sweet potatoes are not my favorite but Ray likes them. I think though this a recipe I will try. I'll let you know if I like them.
