Classic Caesar Salad Dressing and a Gift Card Giveaway

I never would have thought I would have to go to the store to buy anchovies. I would have preferred the anchovy paste, but they didn't have that. I mean come on look at these things they are nasty and when you first open the can it smells like cat food!

Well, that's probably not the best way to start off a post haha! I have to say once I was over the smell and made the dressing it turned out really good. I think I emulsified the anchovies enough to where there wouldn't be any chunks left and I wouldn't have to think about them while eating. I was at the store and decided to do a quick dinner and thought grilled chicken salad. Then I got the spur to make my own dressing. I've seen it done a million times, but I've never made it myself. Why? I dunno, probably because of my fear of breaking the sauce. If you add the oil too quickly, or don't whisk enough then the sauce might break. My solution was instead of dragging the hubby into the kitchen to slowly pour the oil while I whisk I would just use a machine. They live in my kitchen and beg for me to use them so I figure why not lets give it a whirl. There's tons of recipes on the net so after looking at a couple I got the jist and made up my own.

Oh the reason for my quick dinner was because I had a ton of things to get done and one of them was fulfilling my 2009 New Year's Resolution. :) woohoo check that off the list of things to do. I cut my hair off and it's now on it's way to Locks Of Love! Sorry for the lack of a better picture.

Classic Caesar Salad Dressing

1 egg yolk
1 1/2 teaspoons anchovy paste (or about 3 anchovies, minced)
1 teaspoon lemon juice
1 teaspoon Worcester sauce
1 teaspoon Dijon mustard
1 garlic clove, minced or 1/8 teaspoon garlic powder
1/3 cup olive oil
salt and pepper to taste
1 (7 ounce) package salad
2 grilled chicken breast, sliced

Either whisk by hand or using a small food processor or blender; mix all ingredients together except olive oil. Then start to slowly pour the oil in while you whisk. Take your time and don't rush this process. Serve right away on salad or store in an air-tight container. This sauce should last for a few days in the fridge.
