Stuffed Artichokes

This was our first "free" weekend where we didn't have a whole lot planned so yesterday we went to the circus. I can't remember the last time I went I know it was when I was little. We may have been the only people there without a kid in tow, but we where pretty excited about seeing the show.
They had several type of acrobatic tricks, I'm always in awe of these.

Then the animals started to come out and show off their tricks.

There was a lot of singing and dancing going on and some magic tricks. The tigers put on a good routine, even though it was a little short.

At the end the elephants all came back out as well as the whole cast. My opinion of the whole 2 1/2 hour show is the ticket prices are a little high for what you get. I thought it was a little hookie and overdone, but when your a kid it doesn't matter it's a great show.

I love when my mom comes to visit. On her last trip here I got to watch her make my grandmother's stuffed artichokes. My mom does them a little different so I have copied her recipe because who doesn't like wine and more cheese? Since you work with your hands on this one and get dirty you might as well fix a bunch of these. They freeze well too for those times you have unexpected company show up. There is no measurements because it's one of those "by feel and taste" recipes.

Stuffed Artichokes

bread crumbs
Parmesan cheese
salt
Italian seasoning
olive oil

Trim leaves of artichokes.

Also trim base so it will sit flat. pull leaves out to prep them for the stuffing.

Mix all except oil to taste. Pour in a little oil till it packs in your hand.

Pack a small amount of stuffing in your hand and press into spaces between the leaves starting at the base working your way up.

Place stuffed artichokes in a baking dish.

Pour in about an inch of wine.

Bake covered at 350 degrees F. for 2 hours refilling the liquid as it gets low.

  2. Those look good. A whole lot easier to make than the ones I did.

    LOL...the tiger show was probably short, cause if they get ill tempered - you might be lunch!
